  • 2 cups all-purpose flour

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup buttermilk

  • 1 1/2 cups ripe mango puree (from about 2-3 medium-sized mangoes)

  • 1/2 cup diced mangoes (for filling and garnish)

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  • In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  • In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy using an electric mixer.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the flour mixture to the butter mixture, alternating with the buttermilk. Begin and end with the flour mixture, mixing until just combined. Do not overmix.
  • Gently fold in the mango puree until well incorporated.
  • Pour half of the batter into the prepared cake pan. Sprinkle the diced mangoes evenly over the batter. Pour the remaining batter on top, covering the diced mangoes.
  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
